Apple Oatmeal Cookies by Janet Arengo
Mix these dry ingredients together and set aside:
1 c. flour
1-1/4 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. of baking soda
1/4 tsp. nutmeg


In another bowl, beat until well blended:
3/4 c. shortening
1-1/4 c. firmly packed dark brown sugar
1 large egg
1/4 c. milk
1-1/2 tsp. vanilla

Beat the two mixtures together until blended, then stir in:
3 c. quick oatmeal, not instant and not old fashioned
1 c. peeled, diced apples
3/4 c. raisins, optional
3/4 c. walnuts, optional

Apple Oatmeal Cookies by Janet Arengo
Preheat oven to 375° F.
Drop rounded tablespoonfuls of dough about 2-inches apart onto cookie sheets. Bake for 12 minutes or until just set. Do not over-bake. Cool several minutes on cookie sheet before removing.

Janet’s Tip: Have these healthy delicious cookies anytime. Just mix up several batches of dry ingredients, and store each portion individually in zipper bags. Keep in a cool dry place.

Janet’s Gift Hint: These cookies make great gifts, either baked and put into a decorative box or just the dry ingredients in a gift jar with instructions on how to finish them. To create a a decorative jar, fill it with the mixture of dry ingredients. Add a layer of plastic wrap or waxed paper then add the oatmeal, raisins and walnuts. Complete the gift with a tag that explains the recipe.
